OUR INSPIRATION:
Col Fondo, directly translated from Italian, meaning, "with the bottom", is a beautiful expression of sparkling wine. Secondary fermentation occurs in the bottle, similar to Champagne, however there is no disgorgement, which is typically used to clarify before slightly sweetening the wine. Leaving the wine on its lees adds a toastier character with lighter bubbles and finishes unapologetically dry. Its characteristically cloudy appearance makes it that much more special.
OUR INTERPRETATION:This Col Fondo styled sparkling wine was made from hand harvested Pinot Noir and Chardonnay, gently pressed and fermented to make a dry base wine. After settling in the cellar through the cool Winter months, we set the wine into bottle to pick up some spritz in the Spring. Designed to be enjoyed with its lees, this lightly cloudy frizzante wine is straw yellow with notes of stone fruit, hazelnut, sharp minerality and a soft, creamy mouthfeel. It will continue to evolve and develop complex flavours with bottle aging.
