OUR INSPIRATION:
From misfortune comes strength – such is the story of the region of Pouilly, France, in the Loire Valley. After a phylloxera-devastating era, Pouilly’s vines of Gamay and Pinot Noir were destroyed, forcing them to graft from American rootstock. Fortuitously growing Sauvignon Blanc, these wines focus on true expressions of the grape with minimal intervention. These wines are famous for their notes of gun-smoke (or flint), thus giving them the adage of “fumé”. These food friendly wines drink fresh with medium plus acidity, showing aromas of citrus, gooseberry and fresh herbs.
OUR INTERPRETATION:Our 2021 Sauvignon Blanc is inspired by the fresh, mineral-driven, structured whites of Pouilly-Fumé. The grapes were picked at optimal ripeness to balance citrus and stone fruit flavours with a firm acidic backbone. It was then fermented in older French oak barrels and aged on lees for 16 months to build texture and complexity before racking and bottling.
