OUR INSPIRATION:
When we think Bordeaux, we usually think Red Blend - the region's claim to fame for its process of assemblage. However, Bordeaux has much to offer aside from its big reds, especially when it comes to Rose. Classically produced from an assemblage of Cabernet Sauvignon, Cabernet Franc, and Merlot, these roses tend to be darker in colour with aromas of grapefruit, red berries and currants, while priding themselves on drinking fresh and fruit forward.

OUR INTERPRETATION:
Cabernet Sauvignon, Cabernet Franc, and Merlot were harvested at optimal ripeness to accentuate full flavours while retaining fresh acidity for structure. Destemmed, then cold soaked for 16 hours, the fruit was gently pressed to extract delicate, ruby-pink juice. It was then fermented at 12 degrees Celsius for 12 days using classic French rose yeast which is known to produce bright red fruit and floral aromas. Finally, the wine was settled, racked, and stabilized before bottling young to lock in its youthful vibrancy.
