  • OUR INSPIRATION:

    Many will grow it, but few will tame it! Producing quality Pinot Noir is a challenge for most with its thin skins and temper(ature)mental attitude. In the hills of the Willamette Valley, Oregon however, Pinot Noir is king when it comes to reds. The combination of mountainous topography for drainage, along with diurnal shifts - warm days and cool nights - allow the grapes to ripen fully while maintaining acidity and structure. While commonly produced into a single-varietal red, it truly shows its expression of acidity and freshness when enjoyed as a rosé.

    OUR INTERPRETATION:

    Hand harvested hillside Pinot Noir was macerated at 8 degrees celcius for 14 hours then gently pressed. The juice was racked and fermented between 14 to 16 degrees celcius to preserve freshness and elegance. The wine then spent six months on light lees to let aromatics integrate, building up texture and mouthfeel. A combination of warm days and cool nights produced a bone dry wine with crunchy red berry fruit, a hint of violet, a distinct mineral streak, and tons of freshness. This is a balanced, food friendly rosé that shows what cool climate Ontario Pinot Noir can offer.
